  • I found with my sauces And cooking is always refinement How much sauce will i need ..Too little carrots? too much? Do you cut them thick or thin? Is there a better way to get out the most flavor? ...For a gravy i make. I cut and dehydrate some of my vegetables Then blend them to a powder form for the next day Browning liquid And beef fat And slowly cook down a few beef bones Towards the end i add in my vegetables to taste You get hit with the beef flavor but then a nice 2nd flavor comes out Sweet and tart from the carrot and onion

This was just the sauce they talked about but a dish consists of so many other ingredients and everything needs to be perfectly prepared and work well together. And then your menu has to change every now and then and you need to come up with new stuff. It is just fascinating to me.

  • @alex - I don't get why we need to skim off the fat? I would imagine that a lot of the flavor would render into the fat. If we do it just for the 'health aspect', you did add butter to it in the end which kinda defeats the purpose. Wouldn't it be nicer to emulsify the fat (fecule de mais peut-être?) with the sauce to keep all the flavor in? I'm no expert here, I guess there is a reason to it but I just don't get why.

  • You are the man. I am from Puerto Rico, a small island in the Caribbean. I love your content. Here in the island we have a sauce called: “salsa criolla” (creole sauce) which we use in fish, shrimp, chicken and other types of meat. I would love to see you getting out of your comfort zone and trying to make our sauce, may be with shrimp or some nice white meat fish.
